Chicken-Celery Salad with Yogurt Dressing

This chicken-celery salad with yogurt dressing my favorite salads from Turkish cuisine.  I love how tender chicken meat pairs with crunchy celery, cucumber, and walnuts. I also love it that this salad is healthier than most of its mayonnaise laden cousins; the dressing here is good old plain yogurt, mixed, if desired, for a richer taste, with only a few tablespoonfuls of mayonnaise. Try this salad. You’ll love it.

Chopping Celery

Chicken-Celery Salad with Yogurt Dressing

Serves about 6

Ingredients

2 chicken breasts, cooked in slightly salted water until tender, and torn into thin strips by hand
3 celery stalks, thoroughly washed and finely chopped
3 medium fresh cucumbers, peeled and finely chopped
1/2 cup walnuts, finely chopped
About 2 cups plain yogurt  (adjust the amount as needed)
3 tablespoons mayonnaise (optional)
Salt to taste
Ground black pepper to taste
Chopped fresh dill, to garnish
