This is one of my favorite salads from Turkish cuisine. I love how the tender chicken breast pairs with crunchy celery, cucumber, and walnuts. I also love the fact that this salad is healthier than most of its mayonnaise laden cousins - the dressing here is good old plain yogurt, mixed, if desired, for a richer taste, with only a few tablespoonfuls of mayonnaise. Try this salad. You’ll love it.

Chicken Salad with Celery in Yogurt Dressing
Serves about 6
Ingredients:
2 chicken breasts, cooked in slightly salted water until tender, and torn into thin strips by hand
3 celery stalks, thoroughly washed and finely chopped
3 medium fresh cucumbers, peeled and finely chopped
1/2 cup walnuts, finely chopped
About 2 cups plain yogurt (adjust the amount as needed)
3 tablespoons mayonnaise (optional)
Salt, to taste
Ground black pepper, to taste
Chopped fresh dill, to garnish

Directions:
Combine the ingredients in a large mixing bowl. Adjust the amount of yogurt, mayonnaise, and seasoning to taste. Chill before serving. Transfer to a serving plate, and sprinkle the top with chopped fresh dill.

Hi Feride, I love how healthy this chicken salad looks compared to the others I am used to that usually use mayo exclusively. I was wondering do you dice the chicken breasts or run them through the food processor, the consistency looks very fine in your photo. Thanks for another wonderful recipe! Jasmine

Jasmine, thank you for catching that. I forgot to mention - just tear it into thin strips with your hands. Will add it now.

Both you and I love the tender to crisp aspects of a delicious salad such as this. Love your addition of yogurt which I’m sure imparts a tangy bite…mmm!

what can i substitute for the celery sticks ?
12. farida | November 29th, 2011 at 10:52 pm
WENDY - Celery is the gist of the salad for its crunchiness and taste. Not sure if anything else would do the same thing to the salad.

I too am having a difficult time finding celery. I live in Sumgayit and I have not found celery either here or in Baku. I miss it a lot for other dishes also. Is there a source you could recommend here?
